“Let the Good Times Roll” – This is our philosophy – the way we approach life in general. We all have hard and difficult times, such as when we began this new business venture.
The difficult times neither deterred us nor dampened our spirits. This outlook, “Let the Good Times Roll,” helps us to rise above the difficulties when we focus on the real reason we started Distillerie Acadian – purveyors of Louisiana small batch liquor.
We began this as a family adventure, something we decided we could do ourselves and be proud of, holding the family together while making excellent distilled spirits from our own hard work, skill and determination.
Our story goes back to 2012, when Steve Mestayer and his two sons, Jonathan “Jeep” and Philip became intrigued by the idea of creating and selling our own whiskey. With the support and enthusiasm of his two sons behind him, Steve began to delve into the licensing requirements at both the Federal and State levels. While the governmental regulations appeared daunting, the Mestayer family saw it as a challenge worth pursuing, and as of 2017, the distillery became fully operational.
After years of research, experimentation, and refinement, we embarked on our first distillation of Cajun’s Cut™ Bourbon in late Spring of 2017. We aged the bourbon in new, charred white oak barrels, patiently waiting for the perfect moment to share our creation with the world. Years later, we were rewarded with a smooth and flavorful bourbon that exceeded our expectations. We are proud of our hard work, our blessings, and our legacy. And now, we are ready to invite you to join them in celebrating Louisiana’s first bourbon, Cajun’s Cut™.
Our Story
Our Process
Our process reflects our dedication, expertise, and craftsmanship. Nearly every facet of our operation, from grain crushing, to mashing, fermentation, distillation, barreling, bottling, labeling is meticulously executed by hand and in-house. To ensure we are producing the best possible whiskies that we can. The grains are sourced from Louisiana farmers and a local malt house to ensure the grains are top quality. The uniquely HOT and HUMID Louisiana weather ages the whiskies faster and unlike any other state, ensuring that it reaches the optimal level of maturity and flavor. We are confident that our process produces a bourbon that is smooth, rich, and satisfying.
All the while, Philip, who is also our Master Distiller, read almost everything available on making whiskey and bourbon, the mashing process, the use of enzymes and various yeast products, distillation issues, etc.
We built our own mashing, fermenting, and distilling equipment. We decided to use a unique blend of four grains (corn, wheat, barley and rye) for our spirits’ recipes.
Most all of the processes of crushing grain, mashing, distilling, barreling, bottling and labeling are done by hand. Of course it is a long and tedious process, but the end result is definitely worth it – producing small batch liquors and spirits we can be proud of.
